I have a photoshop file containing some rasterised text, for making sign board. the sign board fella says he needs it in Illustrator format which I presume means he needs it in outline. How do I save it in Illustrator?

Humm...converting Raster to vector....you need adobe freehand to trace the image. Smiley

a raster is a bit map,  vector is a coordinate + property (e.g. angle + length).
