Just line up 2 or 3 strobes all with the soft-box and form a bank lah. You have 2 or 3 units and same amount of stands right?
If not, get a huge black corrugated plastic board from any art store. Cut out the central portion and attach tracing paper and use that as your diffusion panel/mini flag. If you get extra boards, you can cut out and velcro additional flaps to attach to the sides of that panel to simulate barn-doors. Easy mah.

the softbox that is meant for the camera flash is small and only allows 1 flash. bigger boxes can't be used with existing brackets for speedlites. need to make a bracket to use with the softbox speedring to use more than 1 camera flash.
the other method u suggest works if i am shooting at home. i think its gonna be way too big to lug around.

No, I meant:
1 speedlight + 1 mini soft-box on 1 stand x 2 = 2 speedlights, 2 soft boxes and 2 stands, lined up one above each other to form a bank.
I can think of other methods, but while they might sort of offer better diffusion, you will have less control over spill.

like this better consider getting outdoor strobes with a proper softbox... much better light quality too

Of course, the easiest is to get the most appropriate equipment for the task at hand.

I am considering that as well, but the last time when I check with Cathay, 2 strobe + softbox and stand cost $2K plus almost $3K...very $$$$
